For anyone who might not have already discovered this book, I would suggest that you check it out. It contains all familiar folk tunes and starts out simple with double stops using at least one open string. The level of difficulty builds slowly and logically and the pieces are fun to play. The only problem that I sometimes run into is that students would prefer to play these well-known tunes up to tempo, when in reality they need to slow down and listen carefully to intonation.

His other books are good too, of course.
